The Barnyard millet (Echinochloa frumantacea) is a wild seed and not a grain, mainly grown in the hilly areas of Uttaranchal, India. The barnyard millet is the fastest growing crop, which can produce ripe grains within 45 days from the sowing time under optimal weather conditions. Nutritionally, Barnyard millet is an important crop. It is a fair source of protein, which is highly digestible and is an excellent source of dietary fibre with good amounts of soluble and insoluble fractions (Hadimani and Malleshi 1993; Veena et al. 2005). The other Indian names for barnyard millet are Vari, Varai, Sanwa, Samwa and Swang. Millets, are predominantly starchy. The protein content is comparable to that of wheat and maize. Barnyard millet has the lowest carbohydrate content and energy value amongst all the varieties of Millets.
