Ingredients:
- 2 cups Super Millets Flakes
- Chopped carrot, sprouts, and potato (as per preference)
- Water for boiling vegetables
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon jeera (cumin seeds)
- 1/2 teaspoon turmeric powder
- 1 tablespoon urad dal
- 1 tablespoon chana dal
- 2 chopped onions
- 2-3 chopped green chillies
- Handful of pudina (mint) leaves
- Chopped capsicum
- Salt to taste
- Grated coconut, for garnish
- Mint chutney, for serving
- Lemon juice, for drizzling
Instructions:
1. Prepare the Super Millets Flakes:
- Spread 2 cups of Super Millets Flakes in a sieve and moisten them. Keep them aside.
2. Cook the Vegetables:
- Take chopped carrots, sprouts, and potatoes.
- Cook them in boiling water until they become tender. Drain and keep them aside.
3. Sauté the Seasoning:
- In a pan, heat 2 tablespoons of oil.
- Add mustard seeds and jeera (cumin seeds) and let them splutter.
- Stir in turmeric powder, urad dal, and chana dal.
- Add 2 chopped onions and sauté until they turn golden brown.
- Add 2-3 chopped green chillies, a handful of pudina leaves, and chopped capsicum. Sauté for a few minutes.
4. Combine and Cook:
- Mix in the pre-cooked vegetables and season with salt.
- Add the moistened Super Millets Flakes and stir to combine everything well.
- Cover the pan and cook for 5-6 minutes on low heat, allowing the flavors to blend.
5. Serve and Enjoy:
- Once cooked, serve the Millet Kanda Poha garnished with grated coconut.
- Accompany the dish with mint chutney and a squeeze of fresh lemon juice for added flavor.
