1 cup Little Millet Flour
1 cup Water
Rock Salt (Sendha Namak) to taste
1 teaspoon Ghee (optional)
1/2 teaspoon Cumin Seeds (Jeera) or Carom Seeds (Ajwain)
Wood pressed Oil (for deep frying)
For Aloo Bhaji in Tomato Gravy
3 Medium-Sized Potatoes (boiled and cubed)2 Tomatoes (pureed)
1 tablespoon Oil or Ghee
1/2 teaspoon Cumin Seeds (Jeera)
2 Green Chilies (slit)
1/2 teaspoon Turmeric Powder (Haldi)
Rock Salt (Sendha Namak) to taste
Fresh Coriander Leaves (for garnish)
Method
Preparing Little Millet Puri
Boil the Water: In a pan, bring 1 cup of water to a boil. Add rock salt and ghee (optional) along with cumin or carom seeds for added flavor.Add the Flour: Gradually stir in the little millet flour while mixing continuously to avoid lumps.
Rest the Dough: Turn off the heat, cover, and let it rest for 5-7 minutes. This helps the flour absorb the water fully.
Knead the Dough: Once warm, grease your hands with ghee and knead the dough well until smooth. The more you knead, the softer the puris will be.
Roll and Fry: Divide the dough into small balls. Roll out each ball into a puri. Heat oil and fry each puri until golden brown and puffed up. Drain on paper towels.
Preparing Aloo Bhaji in Tomato Gravy
Temper Spices: In a pan, heat oil or ghee. Add cumin seeds and let them splutter.Add Chilies: Add green chilies and sauté for a minute.
Tomato Gravy: Pour in the tomato puree and cook until the oil separates. Add turmeric and rock salt.
Add Potatoes: Add boiled, cubed potatoes. Stir well and simmer for 5-7 minutes. Garnish with fresh coriander leaves.
